Hi hello goood morning lovely people! How are we all today, well refreshed after the weekend? I actually feel fantastic after a rather relaxing weekend. Well, I would feel even better if I hadn’t had to get out of bed and wash my hair this morning. But enough about me and my sleep. Today I wanted to share my latest lunch recipe with you all!
But before I share today’s new lunch recipe, let’s take a look back at the week. Do you actually enjoy this? I’m still not back to feeling comfortable writing a week’s summary. However I’ve said it before and I’ll say it again – I do like writing and just clearing my head onto this page. Well, do we count it as a page? Or a screen? Oh I don’t know, I’m just glad that four years ago I took to writing this blog. Anyway, enough with the ramblings, and onto… oh. More ramblings I suppose!
The working week passed relatively quickly I suppose. Last Monday, I had my first “long” drive in the car when I went to collect Dad from the airport. It meant while I waited in the layby, I figured out more about my car and the things it can do, as well as managing to finally set the favourites for who to phone! Tuesday was another quiet enough day after work, with nothing exciting happening. Wednesday night I was back at choir, and while Somebody To Love was abysmal, we were pretty damn good at A Million Dreams and I Know Him So Well. Even if I do say so myself. Thursday I was back to Weight Watchers with just half a pound off, but I’m going to keep going through it until I reach my goal. Even if it takes another year to reach. Friday night we headed to a local pub after work for a drink and light dinner, and we got sitting in the sun for a while. Saturday, we decided to go shopping in Belfast, even in the torrential rain. I didn’t actually buy anything for myself, but I did manage to get sorted for Rachel’s birthday! Only a little ahead of schedule, but thankfully there’s only one last thing left to figure out for it. Now just to start planning her 21st birthday! Then Sunday came about and Mum and Dad were out, so I got sitting to do some blogging and did a bit of meal prep for the week ahead.
I think that’s you caught up? It was a bit of a quick summary, but I really can’t remember much!
So yes, my new lunch recipe for you all! I’m actually only trying it for the first time today at lunch so I’ll let you know what I think of them once I’ve tried them!
A New Lunch Recipe
I will admit, I did find this on Pinterest, but I have adapted it to suit our tastes and to use up some things in the fridge. So yes, today’s lunch is Tuna and Sweet Potato Patties. I managed to make 12, but it all depends on what size you make them.
- 600g sweet potato
- 2 tins tuna (drained)
- 1 red pepper, sliced finely
- 1 or 2 scallions (spring onions), finely sliced
- 3 eggs, beaten
- salt and pepper to taste
- Cook your sweet potato and mash it. I microwaved mine until soft enough to mash, but you could choose to boil it, drain it and mash it from there.
- Preheat your oven to 180 degrees centigrade.
- While your mash cools, fry your pepper and scallions until softened.
- Combine all ingredients in a large bowl and add salt and pepper to season.
- Once combined, make your patties to the size and shape you would like. I took a handful and shaped it into the burger patties.
- Line a baking tray with baking paper, and place your patties on the tray.
- Bake in the oven for half an hour.
- Remove from the oven, and you can either serve hot or cold.
I’ll be having mine for lunch today with a salad and some garlic mayo, but you can serve with cous cous or anything!
