Eeeeek! We are now one full week into December 2017 and I can’t honestly believe that this year has flown by as quickly as it has. But as we start the weekend, I thought I would share a fun-filled recipe that all the family can get involved in.As it’s a Friday and we’re counting down the days to Christmas, shall we take a look at our Christmas Movie Countdown trailer for today? I actually cannot wait to get home from work tonight and curl up with a glass of mulled wine and a blanket to watch this film!
In fact, it’s great. I have this on DVD so can watch it any time of year! I actually only watched it for the first time last year, and I am so confused as to how it took me until this film was 16 years old for me to watch it. Do you like it?
So as it’s soon the weekend, and kids everywhere are getting more and more excited, I wanted to share a family-friendly recipe that you can try making this weekend!
- 225g butter
- 125g caster sugar
- 225g plain white flour
- 125g ground almonds
- Allow the butter to come to room temperature.
- Cream the butter and sugar together in a bowl until pale and fluffy.
- Sift the flour, ground almonds, and a pinch of salt together onto the mixture before stirring in using a wooden spoon until the mixture resembles breadcrumbs.
- Gather the dough together with your hands, and place on a clean worktop.
- Knead the dough lightly until it forms a ball, then wrap it in clingfilm and place in the fridge until firm.
- Grease and line a baking tray with baking paper.
- Remove the dough from the fridge, and roll out onto the baking tray about 2cm thick.
- Mark with a knife roughly where you will be cutting the shortbread, and feel free to put a little design on! As you can see in the pictures below, I decided to put little spots on mine this time, although I normally leave it plain.
- Bake at roughly 180ºC for 15-20 minutes (again, only you know your oven!)
- Remove from the oven and leave to cool for 10 minutes, then cut into your desired shape – I’ve gone with rectangles, but you could cut triangles or anything!
